Happy New Year!
It's my last week of winter break - I have been off work since December 16th. During break, I celebrated the holidays with my family, adopted an adorable pit bull/bullmastiff puppy, and traveled to London with my mom. Life has been busy; and it's about to get even more crazy. This upcoming semester I will be teaching 8 classes; that will be somewhere over 200 students. In preparation of this upcoming semester, I have been working on some new, make-in-advance recipes.

I know it's been a few weeks since I have posted and that's because life has been crazy! I feel like I have never been this busy in my whole life, but I am loving every second of it. I opened a private practice recently and it has kept me incredibly busy (head on over to the counseling services tab if you are interested!).

Ever since I started my new job, the crockpot has become my best friend. Since I work late two nights per week, I aim to have something in the crock pot that is ready to go by the time I get home. Nearly every week for the past month I have made a crockpot meal, and I am excited to begin sharing them with you.

I have had a few people ask me for a new oat recipe since my most popular oat recipes contain blueberries & strawberries (which are now out of season). I came up with this new one after quite a few tries. I could not get the consistency right, but, I eventually figured it out and this recipe is delicious. It a top contender for my most favorite breakfast.

Well, if you didn't see that photo, you can see it here. Anyway, I have still been visiting it on a weekly basis. They always have such great stuff and it's open 6 days a week so it is very convenient.

Public Service Announcement: It's Autumn in Ohio. That means that the local farmer's market is beginning to sell squash and the grocery store has their fall produce display front and center! I am embarrassed to admit it, but I only learned about acorn squash in the last few years. Before that, they were a foreign produce item. Well, after I learned how to make it, I realized just how delicious it is.
