I worked in retail for nearly five years. Last July, I left my retail job and took a job as a full time instructor. During the five years in retail, I worked weekends – like most of them. Most Saturdays until about 4pm, you could find me in the grocery store. It’s funny, because even after five years, I never got used to working on Saturdays; I hated every single Saturday that I had to work.
I have had a few people ask me for a new oat recipe since my most popular oat recipes contain blueberries & strawberries (which are now out of season). I came up with this new one after quite a few tries. I could not get the consistency right, but, I eventually figured it out and this recipe is delicious. It a top contender for my most favorite breakfast.
Today I am sharing another overnight oat recipe. I actually wasn't originally going to share it, but I posted a photo of it on Facebook and Instagram and was requested to post the recipe. Besides this delicious recipe, I am also sharing some of my favorite foods of the Mediterranean trip we went on. We were actually on a cruise ship, so we ate a lot of typical cruise food. But, we made sure that every time we were at a port, we ate the local cuisine.
Are you tired over the overnight oat recipes? I really hope not. Because I can guarantee as the weather turns colder, you will be seeing more of these -- possibly with a pumpkin or cinnamon spice flavor. Hint, hint.
I recently switched jobs and I now work at a community college as an instructor. So, I haven't been able to say this in years, but, it's time to go back to school! With going back to school means that I have to get up earlier to fit my workout in before class. And with getting up earlier means tiredness, crankiness, and possibly a bit of laziness. Laziness only in regards to cooking myself a breakfast.
The other morning I needed to be out of the house by 7am. That might be a normal time for most people; but for me, that is early. Listen, I've tested it time and time again. My body naturally wakes up at 9am every day. It doesn't matter when time I go to bed, I am up at 9am. I realize for a lot of people their body naturally wakes up at 6am. I feel sorry for those people. But anyway, for me to have to be out of the house by 7am, I had to wake up at 5am. FOUR FULL HOURS BEFORE MY BODY LIKES TO WAKE UP.
There are few things that rival my love for banana pancakes on a Sunday morning. Unfortunately, my Sunday mornings are by no means a lazy Sunday morning. In fact, since I usually work on Saturday, my Sundays are jammed packed with things to do; but I always try to start it with a good workout and warm pancakes. I have always had a few tried and true pancake recipes but I think I have finally landed on a favorite.
