There are two types of people in this world. Those who love sweets and those who could get by without them. I am the first type--I need them. My husband is the second type, he could live without them, and, he regularly passes them up. I don't understand him or how he does it, and sometimes I envy him for this. If there is a sweet treat in the house, you better believe I will find it and I will eat it. Hence the reason I don't buy ice cream. We only go out for ice cream, never stay in and eat ice cream.

Since I am such a sucker for all things sweet, I like to have things on hand that will give me the sweet fix but not break the calorie bank. Let's face it, I am short and I am small, so I really only need 1,400 calories to survive. A 500 piece of chocolate cake just doesn't fit in my diet. I also like to get the most bang for my calorie buck. This means I prefer when all of my food, including sweets, are nutrient dense; think little calories, big nutrition bang.

This chocolate chia pudding is just that. Little on calories (<150/serving) and big on nutrients, 5 grams of protein, 7g of fiber. Plus, chia seeds contain heart healthy fats; so, essentially, my heart is thanking me for eating this. Dig in!

Ingredients

  • 1 cup of milk (FODMAPers, use lactose free)
  • 1/4 cup chia seeds
  • 3 Tbsp. cocoa powder
  • 1 tsp. vanilla extract
  • 2 Tbsp. natural peanut butter
  • 2-3 Tbsp. maple syrup

Directions

  1. Whisk to combine all ingredients in a medium bowl
  2. Cover and refrigerate for at least 2 hours
  3. Dish out 1 serving (About 1/2 cup), top with berries or bananas, enjoy!
